Sea Fu Bar

Ideal for those who might want to indulge in a quick drink before dining at the connected restaurant, Sea Fu Bar – located in Four Seasons Dubai Resort at Jumeirah Beach – offers a tranquil space overlooking the Arabian Gulf. Open interiors are framed by verdant greenery, with easy access to the beach for those who wish to enjoy a post-drink stroll. 

Guests can enjoy one of the bar’s exquisite signature cocktails, such as the Kyoto Margarita or the Pandan Old Fashioned; old classics with an exotic Asian twist. Of course, given the bar’s Japanese connections, the Sake menu is of particular prominence; these exquisite concoctions – such as the ‘Soul of the Sensei, Taketejin Junmai Daiginjo’ – represent a sip of history, an essence once savoured by samurai and daimyo as they prepared to meet their fate on the rolling fields of Sekigahara.

Additionally, the menu boasts a curated selection of spirits, highball elixirs and wine by the glass. The space fosters an atmosphere of genteel camaraderie, where the spirit of the time-honoured British club and the legacy of fictional world-traveller Sir James Hendricks mingle as effortlessly as that most British of alcoholic beverages, the fabled gin and tonic.

The expansive cocktail menu has been crafted by talented mixologist Timothy Rosete, who was inspired by the travels of the aforementioned fictional globetrotter when creating these exquisite beverages. The Golden Mirror, a Hendricks House Blend cocktail inspired by Hendricks’ favourite Rodney Dangerfield joke, is a crystalline and insightful drink – not too dissimilar to a mirror in its clarity.

The Coco Mademoiselle is a house-infused Cucumber and Basil Gin, with an equally fascinating backstory. Infatuated upon meeting Coco Chanel herself, Hendricks offered the French fashion icon a glass of champagne, to which she allegedly replied: “I only drink champagne on two occasions: when I am in love and when I am not.” As fabricated lore has it, Hendricks, bewildered, had to then guess which version of Chanel had accepted his drink. It is unknown how Ms Chanel responded.

The Movement cocktail, as the story goes, originated from Hendricks’ meeting with the legendary Abraham Lincoln, who was known for his keenness for change. This 50/50 Bourbon and Rye is infused with spent Coffee, Port Wine, Chocolate Liqueur, Sweet Vermouth, and Bitters.

With five more signature cocktails to explore, the bar also boasts a Bar Snacks menu, in addition to a limited à la carte menu.

Mercury Rooftop

Awe-inspiring views of the globally recognised Burj Khalifa abound from this tranquil rooftop bar, also situated at Four Seasons Dubai Resort at Jumeirah Beach. Complemented by live entertainment, which encompasses a DJ, a singer, a percussionist or a saxophonist (depending on the day), the bar offers a range of ‘wine by the glass’ options, in addition to a good selection of beers. However, as the night evolves and the beats begin to grow, so does the spirit of the evening, as the cocktail menu unfolds like a story of flavour and indulgence.

The Solar Eclipse is the bar’s take on the iconic Negroni, but using Malfy gin, Campari, cacao liquor and amaretto, infused with a light touch of Italian coffee. The Lunar Glow is an updated take on the classic Piña Colada, blending Havana 7 with the fruity banana and pineapple flavours, in addition to spent white wine, all of which combine to add a tropical lilt to your glass. The Aurora Borealis is a refined combination of Malfy Gin, Italicus, elderflower liquor and clarified yuzu, finished with homemade red currant foam; Gin Sour with a Mercury twist.

Penrose Lounge

A chic lounge located at the Four Seasons Hotel Dubai International Financial Centre (DIFC), Penrose Lounge functions as the ideal spot to enjoy a relaxed evening cocktail. A haven of tranquillity amid the energy of DIFC, the space is outfitted with bookshelves, sofas and armchairs, giving it that homely feel which allows guests to sip, unwind and linger as if they were in the comfort of their own living rooms.

Penrose Lounge is designed less as a traditional bar and more as a relaxed social space – a place to enjoy light bites and refined flavours at your own pace.
